【摘要】:1Thisdocumentspecifiesthesafetyandhygienerequirementsforthedesignandmanufactureofcookingkettlesequippedwithpoweredstirrerand/ormixertakingaccountofinstallation,operation,cleaning,removalofjammedfood,feeding,maintenanceandchangingthetools.Thecookingkettlesequippedwithpoweredstirrerand/ormixerareusedfromcateringtosmallscale-foodindustrytocook,coolandmixallcoldorhotfood.Theypermitadditionofingredientsduringprocessingwithoutstoppingthemachine.NOTEThekettlebowlcanbefixedorequippedwithamanuallyorpoweroperatedtiltingmechanism.Inthetextthatfollows,theterm"cookingkettles"isusedtorefertotheequipmentcoveredbythisdocument.Thisdocumentcoverscookingkettlesequippedwithpoweredstirrerand/ormixerhavingtechnicalperformancesinaccordancewiththefollowing:—thermalenergysupplycanbeelectricity,gas(seeEN125andEN161),steamorheat-conductingfluid;—capacityofthekettle:from30lto600l(nominalvolume);—maximumpowerrating80kW;—speedofthepoweredstirrer:10rpmto200rpm;—maximumspeedofthemixer:3000rpm.Themachinescoveredbythisdocumentarenotintendedtobecleanedwithahighpressurewaterjet.Thisdocumentdealswithallsignificanthazards,hazardoussituationsandeventsrelevanttocookingkettles,whentheyareusedasintendedandundertheconditionsforeseenbythemanufacturer(seeClause4).2Thisdocumentdoesnotapplyto:—domesticmachines(i.e.capacityofkettleslessthan300l);—planetarymixerswhicharecoveredbyEN454;—foodprocessorswhicharecoveredbyEN12852;—cookingkettleswithoutpoweredstirrerand/ormixerhavingamanualtiltingkettle.3Thisdocumentdoesnotdealwithhazardduetothepressureonmachineswithadoublejacket.NOTEDependingonthepressureandthevolumeofthedoublejacket,thecookingkettlemayfallunderthescopeofthePressureEquipmentDirective(97/23/EC),fortheEUmarket.4Noiseisnotconsideredtobeasignificanthazardforthesemachines.Thisdoesnotmeanthatthemanufacturerofthesemachinesisabsolvedfromreducingnoiseandmakinganoisedeclaration.ThereforeanoisetestcodeisincludedinAnnexA.5Vibrationsarenotconsideredtobeasignificanthazardforthesemachinesandnotestmethodisgiven.6Possiblehazardsrelevanttogassupplyandheatingarenotdealtwithinthisdocument.NOTETheequipmentmayfallundertheGasAppliancesDirective(90/396/CEE),fortheEUmarket.7ThisdocumentisnotapplicabletothemachineswhicharemanufacturedbeforethedateofpublicationofthisdocumentbyCEN.
